I was raised in a family where food wasn't just something you ate — it was a craft. Both of my parents are professional chefs and bakers who immigrated from Uruguay, so I grew up surrounded by kitchens, recipes, techniques, and a genuine passion for creating memorable food. Living between Uruguayan and New Zealand cultures made it feel natural to combine the best of both worlds.
In Uruguay, Argentina, Chile, Spain, and much of Latin America, flan is more than just dessert. It's what families share after Sunday lunch, what grandparents make for birthdays, and what many people instantly associate with home. It's a recipe that appears simple but is surprisingly difficult to master. Achieving the perfect texture, rich flavour, silky consistency, and flawless caramel takes patience, precision, and experience.
When I started making flan in 2022, it was because I kept meeting two types of people. The first were Latin Americans who missed the desserts they grew up with. The second were Kiwis who were genuinely curious about international food and wanted to experience authentic flavours from different cultures. I realised there was an opportunity to create something that could connect both groups around one timeless dessert.
My first recipe was adapted from one my mum shared with me. From there, I became obsessed with refining every detail. Every batch taught me something new. Every adjustment improved the texture, flavour, consistency, or presentation. Years later, that same dedication has evolved into the recipe we proudly serve today.
Since then, I've made well over a thousand batches of flan. Through constant repetition, refinement, and customer feedback, I've developed techniques that deliver the same smooth, creamy result every single time. That consistency has also allowed me to confidently expand into new flavours while staying true to the traditional dessert that inspired Que Rico.
Today, Que Rico has become one of New Zealand's most recognised specialist flan brands.
